Onion- Til (sesame) chutney

 hi to all my friends,
       

                           today i am going to share onion chutney in many version.
                           first one is here -


Onion-sesame chutney


Ingredients

1- Onion (one big or two small) pealed and ruffly cut 
2- Sesame half cup soak in warm water (for 10 minutes)
3- Garlic 5-6 pods pealed
4- Ginger 1/2 inch pealed
5- Green chilly 3-4
6- salt as per taste
7- Lemon juice 1/2 tea spoon (optional)

How to make 

Take all ingredients in the mixer jar and grind it finely.
serve with pakoda, paratha or even with idli.

                                        Ingredients



Half boiled rice 2 cup (if you use big grain like basmati, it will more good )
Sliced onion 2-3 
Eating oil or butter 2-3 spoons
1-2 tea spoon ginger-garlic paste
Tomato puree 3-4 spoon 
1/2 tea spoon turmeric
Kashmiri lal mirch powder 2 tea spoon
Red pepper powder 2 tea spoon or as much you like
2-3 spoon  thick yogurt
2-3 tea spoon biriyani masala
1 cup  semi boiled Vegitables (like carrot, cauliflower, potato (cube cut), peas, beans etc.) 
                              OR  Mashroom fried
                              OR  Paneer  in medium cube sized
                              OR  Egg boiled

1/2 cup milk
salt
2 spoonful clarified butter aka ghee (optional)


                                             Cooking method
                   

Take a pan and heat the eating oil in it.
fry sliced onion in it.
when it get translucent, add ginger-garlic paste and saute it.
then add  turmeric, chilli powder, pepper and mix it.
add tomato puree and cook till oil separates, stir continue.
now add  biriyani masala , fry it and mix yogurt , saute it.
finally add and mix boiled vegetables in it.
add salt as to taste.

Pick a heavy base or nonstick wok or handi , Greece its base with ghee .
spread a cup of rice on handi base, then vegetable mix evenly.
now spread remaining part of rice.
(you can make many layers of rice and mix, if have more quantity )
sprinkle remaining ghee and pour 1/2 cup milk.
cover this handi properly and put on very low flame for 20 minutes at least.
serve with raita. and enjoy........................

Raw banana stuff paratha

 My little one is really choosy for food items. if she doesn't find it tasty, she will never pick it.
 and like all mothers, i also try to full her plate with healthy items.
so in this way, this time i picked a vegetable which my li'l one always avoid....RAW BANANA..
AND believe me she not only picked it , even she finished it very happily.

Here i am sharing one of them.


RAW / GREEN BANANA STUFF PARATHA.

Ingredients:

raw banana big one
green onion leaves AKA leeks
garlic 2 pods
one tea spoon eating oil
two pinch of turmeric powder
one pinch of asafoetida/ hing powder
salt to taste
two pinch of chaat masala (or any other masala powder which you like) optional
wheat flour dough


How to make:

peel and cut green banana.
take 1 to 1/2 cup water in boiling pan , add turmeric powder and 1/4 tea spoon salt (or as to taste). add banana peace and bring it boil until banana go soften.
now drain water and roughly mash banana. (you can use drain water as stock or use for dough making.)
heat oil in a pan add asafoetida, finely chopped garlic, add mashed banana chopped leeks and mix them well.
add chaat masala and salt if needed.
mix add off the flame after a minute.
spread this stuffing in a plate and make it cool.
now take a dough ball and make it as a bowl shape , fill it with stuffing and close it(use some drops of water on corner sides to close the stuffing properly).
make paratha with ghee/ butter (it is good for child).
cut it into pieces like pizza and serve with ketchup, dahi or any chutney, which your child like.

Kashmiri lal paneer

Hello everyone,
         Its been a very-very long time to talk to all of you (~ 1 and a half year) . In this period of time i faced some big changes in my life. Now i am not just a women or wife, i am a happy Mother of a cute little one, who fulfilled my life with joy and happiness. In every moment i am learning and discovering something new. i living totally new life . From past one and a half year, i hardly get time for me, even not for my daily needs. But surprisingly, i don't have any complain to any one. I am just a happy person and thankful to God, who gave me a chance to being Mom...
I am a mother of newborn, so its a request to other moms, please share your experience and tips, related to your little one. It will be useful to all of us (new moms).....

After a long time yesterday i cook something differently, which i wanna share to all.
It is KASHMIRI LAL PANEER. i gave this name for my recipe because i used kashmiri lal aka kashmiri lal mirch.
so friends enjoy it....

Its ingredients:

                     Paneer 200 grams, cut in cubes and soaked in warm water
                      for 5 minutes
                     Kashmiri lal mirch 5-6 big size, soak in warm water
                      for 10 minutes and make
                     thick paste (or you can use ready-made powder 3 tea spoons)
                     Red onion 2 medium size, finely chopped
                     Red tomatoes 4-5 medium sized, (puree or finely chopper )
                     Coriander powder 2 tea spoons
                     Garam masala or curry powder 1/2 tea spoon (optional )
                     Salt as to taste
                     cooking oil 2-3 tea spoons


Now start cooking:   
               

                      Heat cooking oil in a heavy bottom pan, and fry kashmiri 
                       lal paste in a low flame for a minute.
                      Then add coriander powder and again fry for a minute.
                      Add 2-3 spoon water and dry it gently.
                      Now add salt, then chopped onion, stir and add 200 ml. water.
                      Cook with lid for 3-4 minutes in low-medium flame.
                      When onion get soft, add tomato puree and mix it well.
                      Again cook for 3 minutes and add paneer cubes
                       (and garam masala, it is optional).
                      Close lid and cook 2 minutes in low flame.
                      Serve Hot with steamed rice or any kind of Indian bread.

Veg-Pulav and Mix-Raita with Dal 'A perfect and quick meal' for guest

Hi friends,
      Today was very hectic day for me. I feel very tired, and didn't want to do anything more, but bad news was that no vegetables in my refrigerator and  the only shop on near, where i can get vegetarian spaghetti as meal is closed today. So now i have no other option and have to cook within half an hour (because after that my husband will be ready for dinner).
 I started to cook plain yellow Dal and steam rice (i think it is a easiest north indian meal).
Meanwhile my hubby ring me and gave me a news, that his one office colleague also coming for dinner and they are coming within 10 minutes (good news was that want only meal no starter). Generally i feel happy to host, but today i was not.
As per my capacity i have decided to do little more, and finalize the menu-

 Plain Yellow Dal (because Dal cooked already),
Veg-Pulav (because Rice just started to boil)
Mix-Raita (with only available onion, tomato and green chilli)
and Gulab jamun as desert ( i have made day before yesterday)

Luckily, my guest liked it, and now i share my quickest dinner recipes for guest.

I think every indian (or who like to cook indian food) know to cook Plain Yellow Tuar Dal .
Gulab jamun recipe  i have already posted.

So now Veg-Pulav recipe is here-

Ingredients:
Rice 2 cup
Black cardamom 1 small
Cinnamon  1/2 inch
Bay leaf 1 small
Clove 3-4
Black pepper 3-4
Butter 4 tea spoons
Salt as to taste
Cumin 1/2 tea spoon
Vegetables which you like ( i have only cottage cheese and cauliflower)

 Method:
Wash rice and boil with black cardamom, cinnamon, clove and salt (and cool them open).
Meanwhile melt butter and fry vegetables.
In the same butter add  cumin, black pepper and bay leaf.
Stir and add fried vegetables, mix boiled  rice properly and close for a minute in low heat.
Add salt if required and off the flame

Mix-Raita

Ingredients:

Curd 1 to 2 cup
Tomato 1
Onion 1/2
Green chilli 1or 2
Salt
black pepper powder (if you like) 1 pinch
black salt powder 1 pinch

Method:

Chop tomato, onion and green chili finely.
In plain curd add it and mix with salt.
Garnish with 1 pinch black pepper powder.
At serving time, sprinkle black salt if you like.

I am back

             Sorry for that, there were some family responsibilities.. but now i am back !! and we will chat and share everything, of course everything will be foodie........
In this rainy season i always miss my India, because i love indian rain, every evening with hot 'masala chai' and 'pakoda and bhajiya' . i really miss my india......

Crispy karela (Bitter guard snack)

Bitter guard or 'Karela' in hindi, a very bitter in taste, but at the same time very good for health.
It has numerous vital vitamins and minerals including vitamin A, Copper, vitamin B1, vitamin B2, Iron, vitamin C, Calcium, Phosphorous and Potassium.
There are many health reasons to include this bitter vegetable  in your diet, like:

1- The bitter gourd is particularly used as a remedy for diabetes because of its hypoglycemic action. It contains insulin-like peptides, alkaloids and charantin, all of which act together to lower blood and urine sugar levels without increasing blood insulin levels.

2- 
It has blood-purifying properties. bitter guard juice is used in the treatment of blood disorders like blood boils and itching due to blood poisoning.

3- 
It has high amount of beta-carotene that helps alleviate eye problems and improving eyesight.

4-It is an antidote for alcohol intoxication, and helps purify, restore and nourish liver.

5- Bitter gourd is also effective in treating skin diseases or skin infections, eczema and psoriasis. It also helps in keeping the skin free from blemishes and keeps the skin glowing.


today i am sharing a snack of bitter gourd. I use it as side dish with boil rice and plain yellow dal or with any bread and gravy.
 

so friends note this easy recipe:

Ingredients you need:

Bitter guard 1/2 kilo grams
Salt 2 tea spoons
oil for fry

Method for cooking:

Wash and remove the outer layer of bitter gourd.
Take salt and rub it on bitter guard's outer side (just like marinate), and leave for 10 minutes.
Now its bitter juice will coming out, wash and soak it with kitchen towel.
Cut it into rounded shape and deep fry in oil.
Sieve on soaking paper and let them cool.
Serve it and enjoy...!!!
